Cornwall sits at a maritime crossroads with warm Gulf Stream currents and cooler northern currents providing us with a diversity of delectably fresh fish, shellfish and crustaceans. We’re driven by quality and we’re not geared on price. Our exclusive suppliers allows us to sustainably bring to London our specialty of Cornish dressed crab, grilled lobster grilled plaice and pan fried Hake, deliciously inspired by the local history and sophisticated quality of Cornish cuisine.
Sustainable fishing practice means that we consider the long term future of the species, supporting more selective and seasonally diverse methods of fishing, which is imperative to allow stocks to replenish, respecting sea life habitats and protecting the livelihoods of those boutique businesses that depend on the sustainable choices of more cautious buyers.
We pride ourselves on supporting smaller, more sustainable fishing fleets that operate causing minimal impact on stocks and the marine environment, which is essential for healthy waters and even healthier fish. This boutique method of working allows us trace every single fish back to the name of the ship and the fisherman who caught it, so we’re consistent on quality and confident in every dish we serve.
